Friday Favorites
Miso Soup with Chili Crisp is just what the doctor ordered. And by doctor I mean me.
Welcome to Friday Favorites! This is a quick glimpse of my week that goes out to all subscribers (free and paid). I include a fan-favorite recipe we made in a cooking class, something I’m watching, reading, or listening to, a recent find, and a win for the week.
What I’m Cooking
Guys. I'm dragging. I'm fighting a cough and I'm annoying myself with the constant hacking. I'm sure my husband's patience is being tested! Let's hope the coughing stops soon. (Don't worry, I've been to the doctor, finished antibiotics and a round of steroids, and I know it will fade soon!). That said, this week I made a batch of Super Fast Miso Soup in a cooking class for my Smart in the Kitchen School members and it was just what I needed. I've been warming up leftovers with a touch of chili oil and it helps to open my sinuses. I love it with lots of thinly sliced bok choy, but spinach or thinly sliced Napa cabbage would also be good. I use this miso, but any mellow miso would be good. I use these sheets of nori, but snack packs of nori work, just break them apart when you add to the soup. If you don't like tofu, leave it out and just make a brothy vegetable soup with tons of flavor and umami, thanks to the miso paste. I like to stir in some chili paste at the end to add heat. This brand is so good! I also like the Trader Joe's brand Chili Onion Crunch. (Guys: These Amazon links are affiliate links where I make about a cent on the dollar, but if you use Amazon and want to try these, I would so appreciate it if you use my link. I like to link them for you guys so you can see the brands I recommend!)
You can find all the SITK recipes I’ve shared on Substack in my Recipe Index.
What I’m Listening To
My therapist (Yes, I talk to a therapist once a month and it is the best! I consider her a friend and champion, and I feel very fortunate that I can afford her professional care. Highly recommend you find someone you "vibe with" if you're considering and can afford it. I know some clinics have a sliding scale! My therapist is based at Psychology Houston, and I also love Nick Finnegan Counseling if you're local. I keep a list of things I want to run by her on my phone and we get after it!) Anyway!!! My therapist told me she was listening to Pamela Anderson's memoir and that it was smart, insightful and inspiring. I downloaded the Audible version and I can't wait to dive in. I love it when a woman's story is not what we have been led to believe, ya know!? I also love it when an author reads her own book (i.e., Ina’s memoir).
What I’m Coveting
My daughter found this super cute striped fleece, which is such a good price. I also have this army green fleece and wear it around the house and to run errands all the time!
This Week’s Win
I'm honestly grateful January is coming to a close. This has been an emotional and somewhat exhausting month! Now that all three of my kids are back in school (these college kids start late!), we can get back into a routine of healthy eating, neighborhood walks, and better sleep. Have a great weekend, friends!
