Welcome to Friday Favorites — I can’t wait to share this week’s scoop. It’s a *very quick* glimpse of my week that goes out to all subscribers. I’ll include a fan-favorite recipe we made in a cooking class, something I’m watching, reading, or listening to, a recent find, and a “win for the week.
What I’m Cooking
This week, I was craving an old favorite: Chicken in Lettuce Cups. It's fast, makes a ton of meat filling (leftovers for lunch!), and is easy to make soy-free. You can find it in my cookbook or a version on my blog. During cooking school, one of our instructors taught us this and told us it was based on a recipe she made at a hotel in Hong Kong. To make it vegetarian, substitute crumbled tofu for the chicken. My son used to ask for this weekly when he was little, and we’d warm the leftover meat filling over rice or cauliflower rice or wrap it in a warmed tortilla (it might sound slightly odd, but it’s a great pairing — almost like moo shu).
What I’m Reading
Last weekend, I was so busy preparing for my retreat that, besides college football, I had to restrain myself from escaping into books and shows. I downloaded Blue Sisters but haven't started it yet, and I also downloaded Sally Roony's new book, Intermezzo. I plan to dive into some reading when I finally get my grey hairs taken care of on Friday. It’s been a busy fall!
What I’m Coveting
Guys! Riveting news! Last week, I shared my favorite duvet from Boll & Branch, and this week, I realized the store in Houston accepted the Holiday Shopping Card. My new duvet is secured! The only thing I'm currently obsessing over is new readers. My eyes are tired, and I need these in every purse, drawer, and pocket. I ordered this three-pack of retro readers.
This Week’s Win
I’m unsure where to begin, but I am beyond grateful to an incredible group of Kitchenette Farm retreat attendees who trusted me with their time this week. We cooked, laughed, shopped, and relaxed at my farm and in Round Top. I can't wait to share more details soon.
