Sausage, Egg and Cheese Skillet Breakfast with Greens
Choose your own adventure: Make the sausage version or vegetarian. Both are delicious and made in one pan!

It’s the time of the (school) year when making breakfast feels like a slog. I try to remind myself that my school breakfast days are numbered and I will miss them one day! But we’re all tired, a little burned out and ready for more mellow mornings. Enter this skillet breakfast that you can make on the weekend and reheat for servings throughout the week. I have both a sausage and a vegetarian version attached below. This truly takes about 20 minutes total to put together and will save your sanity on weekday mornings.
Sausage Skillet Breakfast
1 tablespoon avocado oil
1 small onion, chopped
1 pound ground breakfast sausage (or ground chorizo)
½ pound frozen hashbrowns
2 ounces spinach or other greens
6 eggs
½ cup egg whites
¾ cup grated sharp cheddar
