A million-dollar concoction of eggs, sausage, cheese, greens and hashbrowns that will provide breakfast all week long.

It’s the time of the (school) year when making breakfast feels like a slog. I try to remind myself that my school breakfast days are numbered and I will miss them one day! But we’re all tired, a little burned out and ready for more mellow mornings. Enter this skillet breakfast that you can make on the weekend and reheat for servings throughout the week. I have both a sausage and a vegetarian version attached below. This truly takes about 20 minutes total to put together and will save your sanity on weekday mornings.

Sausage Skillet Breakfast

  • 1 tablespoon avocado oil

  • 1 small onion, chopped

  • 1 pound ground breakfast sausage (or ground chorizo)

  • ½ pound frozen hashbrowns

  • 2 ounces spinach or other greens

  • 6 eggs

  • ½ cup egg whites

  • ¾ cup grated sharp cheddar
